While I was visiting the 2026 New York Auto Show, I had the opportunity to talk with LJ Koch of Luc’s Fajita Hut regarding one of the most unique builds on the ground floor of Huntington Place. I never imagined I’d see a Corvette-based food truck, AKA the “Vettro”, competing for an official attempt at a world speed record.

Frank Bisciotti: What exactly is the Corvette Food Truck?

LJ Koch: The Corvette food truck, the Vettro, is a purpose-built vehicle for Luc’s, which is our company. It’s a quick-service restaurant brand.

What we’re setting out to do is set a world record for the fastest speed achieved by a food truck. It’s never been done before, which opened the category for us last year.

Frank Bisciotti: So it’s an official attempt at the Guinness Book of World Records?

LJ Koch: Yes, correct. We’ll be looking to set the record hopefully in 2026, either in the summer or fall. We’re trying to identify a location where we can potentially set that record.

Design and Favorite Features

Frank Bisciotti: What is your favorite feature of the truck?

LJ Koch: My favorite feature—and the part that makes this project special—is that it’s not just any Corvette. It’s a C8 Corvette, a brand-new mid-engine model.

The exterior detail I’m absolutely in love with is the custom DR Forged wheels they made for us.

Before we installed them, we had 6-inch wheel spacers on the factory wheels and tires. Now that we have these, I’m completely in love with the setup.

Driving Experience

Frank Bisciotti: What’s it like to drive?

LJ Koch: It’s perfect. It drives straight down the road and feels like I’ve been driving it my whole life. I get in it and can see right out over the steering wheel.

You could drive it 100 miles an hour down Route 287 and you’d never know you’re in something like this. You sit really low inside it, and the dash is low, but the visibility is actually very good.

That’s probably the biggest comment we get—people saying, “The guy can’t even see out of it.” But once you get in, your visibility is better than half the cars in this entire show.

Menu and Food Philosophy

Frank Bisciotti: What kind of food and drink does the truck serve?

LJ Koch: Luc’s, also known as Luc’s Fajita Hut, is a full-service name. We make hot gourmet sandwiches. I call them fajitas—not tacos at all.

Our popular sellers include shaved ribeye cheesesteak and Korean pork. They’re all fajitas: flour tortillas toasted with cheese, with meat and toppings on top.

LJ Koch: The Corvette food truck is available to book all over North Jersey and New York. You can also visit Luc’s at our first brick-and-mortar location in Oakridge, New Jersey.
